Chicken pad thai with spicy sauce on peanuts

In 1939 the Thai government wanted to increase nationalism and named one of the country’s most typical dishes Pad Thai. Then, to increase the consumption of this dish, the government subsidised noodles to make it easier to distribute the dish in urban areas and thus creating one of the first street foods financed by a government. Meal rich in protein and dietary fiber.

Mise en place:

Cut pepper into long strips.
Cut chicken into medallions.
Mince garlic and ginger.
Chop peanuts. 

Prepara los ingredientes - Pad thai de pollo

The noodles:

Boil noodles 8 minutes.
Pass through cold water and set aside.
(You can even leave them in cold water for a few minutes.) 

The sauce:

Mix well:
– juice of half a lime fruit
– peanut butter
– soy sauce
– mirin
– sambal oelek 

The chicken:

Fry the chicken, 3-5 minutes.
Season with salt and pepper.
Set aside. 

The wok:

In the same frying pan or wok, in the chicken juice, fry garlic and ginger 30s. Add a dash of cooking oil if necesary. Add pepper and sauté for a few minutes until tender.
Add noodles, chicken and sauce.
Stir well until all is heated up. 

The finishing touch:

Remove from heat and add coriader and sesame oil.
Stir well.
Serve with peanuts and lime wedges.
