Meat pie with minced vegetables and sweet potato puree

In the diet of the ancient Egyptians there were pies made from oats, wheat, rye, barley, filled with honey and baked over hot coals. They were then adopted by the Greeks, and it was them who first stuffed the pies with meat. Today in an English version with the typical ingredient: Worcestershire sauce.

The oven:

Preheat the oven to 220ºC, heat above and below.

Mise en place:

Chop chives and cut into small cubes: carrot, celery, onion and pepper.
Cut sweet potato into slightly larger cubes. 

The sauce:

Heat a dash of oil in a pot.
Saute carrot, onion, celery and pepper over medium heat for 5 min approx.
Add minced meat. Season with salt and peppr. Mix well. Add Worcestershire sauce, thyme, meat stock, half a glass of water and mix well.
Let boil 8 min. Add water if it dries out.  

The puree:

Place sweet potato in a pot and cover with water.
Bring to a boil and cook for about 15 minutes, until tender when pierced with a fork.
Drain and mash with blender or fork.
Add chives and a dash of olive oil. Season with salt and pepper. Mix well.  

The pie:

Place the sauce in a baking tray.
Spread the puree on top.
Bake for 10 min.
