Vegetarian poke bowl

This is a vegetarian version of the Poke Bowl. This dish is of Hawaiian origin but inspired by Japanese cuisine. Generally, fish is its main protein, but we can also enjoy it only with fresh vegetables. #Vegetarian

The rice:

In a pot, bring water (2 glasses of water for each glass of rice) and rice with a pinch of salt to a boil with the lid on.
Reduce the temperature to a minimum and boil with lid until all the water is absorbed (10-15min). Add mirin and set aside the same pot. 

El arroz

The vegetables:

Peel and grate carrot.
Cut cucumber into cubes, red cabbage into thin strips, radish into thin slices, cherry tomatoes in half and nori seaweed into thin strips (easier with scissors). 

The dressing:

Mix mayonnaise with sriracha. 

Your bowl:

Divide rice between bowls and then place the ingredients clockwise in the way that you like.
Once finished place a tablespoon of the dressing on top and finish with a sprinkle of sesame seeds.
