Tarragon chicken with sweet potato and oven baked vegetables

The health benefits of foods such as broccoli, sweet potato and apple are many and well known. Here we mix all of them. Apart from being an interesting explosion of aromas, we bake the vegetables in the oven to enhance flavour, conserve nutrients and use less fat. In addition, it is easy and requires very little attention.Meal rich in iron and vitamins.

The oven:

Preheat the oven to 225 °C, heat above and below.

Mise en place:

Peel and dice sweet potato (1cm).
Cut broccoli into small florets.
Remove seeds from the apple and dice it (1cm).
Slice shallot. 

To the oven:

Put sweet potato and broccoli on a baking sheet. Add a dash of oil and season with salt and pepper.
Bake 20 min. Stir occasionally.
Add apple and shallot and bake 10 min more. 

The chicken:

In a frying pan, fry chicken, 8-10 min per side.
Season with salt and pepper.
Once the chicken is ready: in the same pan, without cleaning or turning the heat off, add a dash of oil, the vinegar, the tarragon and a couple of tablespoons of water. Boil until combined 30s – 1 min. Turn off the heat and reintroduce the chicken and let it soak in the sauce. 

Your meal:

Serve chicken with the baked vegetables.
