Oregano chicken with greek orzo salad

Orzo is a type of pasta that is shaped like grains of rice, and its name is derived from the Italian word for “barley”. Although it looks like rice, orzo is made from wheat flour and can be found in various sizes, from small to large. It is popular in Mediterranean and Middle Eastern cuisine and is used in a variety of dishes, such as salads, soups, and stews.

The orzo:

In a pot, bring plenty of water with a pinch of salt to a boil.
Add orzo (risoni) and let it boil for 6-8 minutes according to preference.
Drain and rinse with cold water.
Set aside.

The chicken:

Heat a dash of oil in a frying pan and fry chicken over medium heat on both sides until cooked through, 4-6 minutes per side. The chicken is ready when the juice runs clear when cut (not pink).
Season with oregano (save some for later), salt and pepper. 

The dressing:

Zest lemon peel. Cut and squeeze lemon.
Mix lemon juice, lemon zest, mustard, a drizzle of olive oil, and season with salt and pepper.
The dressing may have a slightly spicy flavour due to the lemon and mustard. If you prefer it to have a milder taste, you can add a bit of sugar or honey if you have at home. 

The vegetables:

Cut scallions at an angle.
Cut cherry tomatoes in half.
Peel cucumber and cut it in half lengthwise. Remove seeds with a spoon. Cut into cubes.

The salad:

In a bowl, mix orzo, scallions, cherry tomatoes, cucumber, and Kalamata olives.
Incorporate dressing to taste. 

Your meal:

Slice chicken and serve with orzo salad. Finish with a sprinkle of oregano and crumbled feta.
When you eat, remember that the Kalamata olives have pits.
