Chicken with pak choi salad and rice

Pak Choi is of Chinese origin and belongs to the cabbage family. A very healthy vegetable with good digestive properties. It contains vitamin A and vitamin C. It can be cooked in many ways, sautéed, steamed and boiled. Today we accompany it with chicken and rice.

The rice:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 10-15 min or until the rice has absorbed the water.

The eggs:

Place eggs in a pot and cover with water.
Count 8 minutes from the moment the water starts to boil.
Rinse in cold water, peel and cut into quarters.

Mise en place:

Cut pak choi into quarters (lengthwise).
Chop chives and cut lemon into wedges.  

The pak choi:

Heat oil in a frying pan and cook the pak choi al dente.
Salt and pepper and squeeze 2 lemon wedges on top.
Set aside. 

The chicken:

Heat oil in the pan again and cook the chicken well on both sides, until fully cooked through. Season with salt and pepper.
Just before finishing, add the butter to make the chicken “golden”. Squeeze a little lemon on top.
Serve chicken with pak choi, rice and a sprinkle of chives on top.
