Chicken in kimchi sauce with pickled red cabbage

Kimchi is a Korean dish made from a fermented preparation that has Asian cabbage as its basic ingredient. It is a 100% plant-based food with a salty and spicy flavor. Today we present it as a sauce to accompany our chicken.

The oven:

Preheat oven to 220ºC, heat above and below.

The vegetables:

Chop cilantro.
Cut red cabbage and onion into julienne.
Cut apple into wedges (removing the seeds). 

The pickle:

In a pan, mix brown sugar, apple cider vinegar and half a cup of water.
Bring to a boil and add onion and red cabbage.
Mix well and set aside to rest. 

The chicken:

In a bowl, mix kimchi sauce, soy sauce, and coriander.
Separate 2 tablespoons of the dressing in a separate glass.
Add chicken to the bowl and let marinate for about 15 min.
Place chicken on an oven try and cook in the oven for about 15 min until done. The chicken is done
when it is white inside, not pink. The juice must come out clear when cutting.

The apple:

Bake apple wedges in the oven for about 15 min until tender. You can put them on the same oven tray as the chicken. 

The rice:

In a pot, place 2 measures of water for 1 of rice.
Add a pinch of salt.
Bring to a boil and lower the heat. Let boil covered over low heat for 10-15 min until there is no water left.
Serve the chicken with baked apple, pickled cabbage, rice and with a little of the dressing on the side.
