Chicken hoisin with couscous

The Hoisin sauce is of Chinese origin and is used for dishes such as Peking duck and other dishes with pork, it is also used in the Vietnamese cuisine for pho. On this occasion we combine it with chicken breasts.

The couscous:

Heat the same amount of water as there is in couscous, using a glass as a reference. Add a pinch of salt.
When the water boils, remove from heat and add couscous.
Cover with a lid and let it absorb the water.

The vegetables:

Chop onion, pepper and chives. 

The salad:

Mix couscous with vegetables.
Season with salt, pepper and a dash of olive oil. 

The tomatoes:

Sauté tomatoes in a frying pan with a dash of olive oil.
Season with salt and pepper. 

The chicken:

Fry the chicken in the frying pan until fully cooked through. The chicken is done when the meat inside is white and the juice is transparent, not pink.
Just before finishing, add the hoisin sauce and make sure the whole chicken breast is covered in it. Let the sauce caramelise a bit. 

Your meal:

Serve the chicken with the salad, the sautéed tomatoes and a sprinkle of sesame seeds.
