Greek-style chicken with stir fry and tzatziki

Tzatziki is a characteristic dressing of Greek and Turkish cuisine. The main ingredients of tzatziki are Greek yogurt, mixed with plenty of grated cucumber, olive oil, lemon juice or vinegar, garlic and sometimes: parsley, mint, pepper or dill. It is served in a bowl, cold or at the ideal temperature of the yogurt.

Mise en place:

Chop mint.
Peel and cut cucumber in half lengthwise. Remove seeds with a teaspoon (throw away). Cut into cubes.
Cut onion into julienne.
Remove bone from olives and cut into pieces.
Break feta cheese into pieces with your hands.

The tzatziki

Mix yogurt, mint and cucumber in a bowl.
Season with salt and pepper.
Add a dash of olive oil and mix. 

The stir fry:

Heat a dash of oil in a frying pan.
Add onion and cook over medium heat for 4 minutes.
Add feta cheese and olives.
Season with salt and pepper and mix.
Cook for 4 minutes over medium heat.
Set aside.

The chicken:

Heat a dash of oil in the frying pan again.
Add chicken.
Cook on both sides over medium heat until cooked through. The chicken is done when the juices run clear, not pink, when pierced.
Just before finishing, season with oregano, salt and pepper.
