Mediterranean-style chicken with sweet potato mash and roasted peppers

Prepare the ingredients:

Bring a pot of lightly salted water to a boil.
Peel and dice sweet potatoes.
Chop garlic and halve tomatoes. Combine in a bowl.
Roughly chop peppers.
Clean beans chopping off the ends

The sweet potato mash:

Cook sweet potato, covered, 16 to 18 minutes, or until tender when pierced with a fork. Drain thoroughly and return to the pot. Add a dash of olive oil and ñora paste. Season with salt and pepper. Using a fork, or potato masher, mash to your desired consistency.

The chicken:

While the sweet potatoes cook; season on both sides with salt, pepper, and Italian herbs.
Fry in a with a dash of oil 6-8 min per side, or until browned and cooked through (white inside, not pink). Set aside and cover with foil to keep warm. Don’t clean out the frying pan. 

The veggies:

In the same frying pan, heat a drizzle of olive oil and cook green beans 2-3 min. Add a splash of water and cook 1-2 min more.
Add garlic and tomato. Cook 2-3 min.
Add vinegar and cook 30s – 1 min. Season with salt and pepper.  

Serve your meal:

Slice the chicken and serve with sweet potato mash and cooked vegetables. Top the chicken with chopped peppers and crumbled feta cheese.
