Chicken tikka masala with basmati rice

The rice:

In a small pot, bring water (2 glasses of water for each glass of rice) and rice with a pinch of salt to a boil with the lid on. 
Reduce the temperature to a minimum and boil with lid until all the water is absorbed (10-15min).
Reserve in the same pot.

Mis en place:

Chop the onion.
Remove the seeds of the chili and chop it as well.
Peel the ginger and grate it.
Cut the chicken breast into large cubes. 

The tikka masala:

Heat ghee in the skillet. Fry the onion until it softens.
Add chilli pepper, ginger, spice mix (turmeric and garam masala) and fry a minute.
Add chicken, yogurt, tomato + water (same amount as tomato) brown sugar, salt and stir.
Boil covered for 20 min at low heat. 

Your meal:

Separate coriander leaves from the stems.
Serve your chicken tikka masala with rice and some coriander leaves on top.
