Mexican quesadillas with black beans and chipotle sauce

Chipotle is a type of chili whose name comes from the Nahuatl (Aztec-Mexican) Chilpoctli. It means smoked chili. It dries with smoke rather than air and thus gets its distinctive flavour. In many cases it is consumed as a sauce, here with some vegetarian quesadillas with black beans, or “frijoles”. #Vegetarian

Mise en place:

Chop coriander and squeeze lemon.
Cut cherry tomatoes in half and scallion finely at an angle.
Cut avocado into cubes. 

Mis en place - Quesadillas mexicanas

The filling:

Mix beans, cilantro, scallion, cheddar, half the lemon juice, and chipotle (spicy). Season with salt and pepper.

The quesadillas:

Place a tortilla in the frying pan over medium heat.
Put filling on the tortilla and close in the shape of a half moon.
Heat the tortilla on both sides (flipping it over).
Repeat for all the tortillas. 

The salad:

Mix rocket leaves, cherry tomatoes, avocado and the rest of the lemon juice. Season with salt and pepper.
