Vegetarian quesadillas with black beans and zucchini

Prepare the ingredients:

Cut zucchini in croissants.
Cut the onion into julienne strips.
Drain black beans.
Zest lime. 

Prepara los ingredientes - Quesadillas vegetarianas

The sauce:

Heat oil in a frying pan and sauté zucchini and onion until golden.
Add beans, tomato, cumin, cayenne, and juice from half the lime. Season with salt and pepper.
Let simmer 4-5 min, without lid.

The cream:

In a bowl, mix crème fraiche and lime zest. Add a pinch of salt.

The salad:

Cut the lettuce in thin slices.
Put in a bowl and season with salt and pepper.
Squeeze resto of lime on top and add a dash of olive oil.

The quesadillas:

Take a tortilla, put sauce on one side and grate cheese on top.
Fold the tortilla over the sauce and cheese. Repeat for all the tortillas.
Fry the quesadillas (without oil), approx. 2 min per side until golden. 

Your meal:

Serve your quesadillas with salad and lime cream.
