The oven:

Preheat oven to 220ºC, heat above and below.

Prepare the ingredients:

Peel and slice carrot
Cut onion into julienne.
Chop pepper.
Cut lemon in half

The veggies:

Put carrot, red pepper and onion on an oven tray. Add
a dash of oil and season with salt and pepper.
Bake 20-30 min. Or until vegetables are golden. Stir
occasionally.

The couscous:

When the vegetables are 5 minutes away from being done, bring water to a boil.
Mix: 1 measure of couscous with 1 measure of water (100ºC), juice of half the lemon, cinnamon, 1 pinch of salt and a dash of oil. Stir well and set aside until the water has been absorbed. 

The halloumi:

Slice cheese and cook on medium-high heat in a frying pan (without oil).

The salad:

ix couscous (separate the grains with a fork and let them fall into a large bowl) with vegetables, raisins and rocket leaves. Squeeze remaining lemon on top. 
Serve with grilled cheese.
