Mexican quinoa with black beans and avocado

With a Mexican touch, this refreshing dish is full of surprising aromas, from the lime juice all the way to the spicy touch of jalapeño. Not only is it healthy and nutritious, it is also incredibly easy to make. Just throw everything in the skillet and that’s it. Even the quinoa is cooked directly in the pan, which really allows it to absorb all the flavours. Meal rich in proteins and folic acid. #Vegano

Mise en place:

Mince garlic.
Wash beans in a colander. 

Prepara los ingredientes - Quinoa mexicana

The stew:

In a large pan (or pot) with a lid, fry the garlic in a dash of olive oil.
Add quinoa, vegetable stock, beans, chopped tomato, corn, spicy paprika, cumin, a cup of water and season with salt and pepper.

The quinoa:

Bring it all to a boil, cover and reduce the heat to medium-low. Let simmer until the quinoa is done; approx 15 min.
Stir occasionally.
If necessary, add more water so it does not dry out. 

The finishing touch:

Cut the avocado into cubes and chop the cilantro.
Remove the quinoa from the heat and incorporate avocado and cilantro.
Squeeze lime over it all and serve with jalapeño.
