Baked soy ragu with rigatoni

Soy, like many legumes, has a high protein content and hardly any fat. Also, it has a lot of fibre. Texturized soy is made from soy flour. It is a processed product, but totally free of chemical additives or colourings. The oven:

Preheat the oven to 200ºC, heat above and below.

Mise en place:

Put soy mince in a bowl to soak.
Mince onion and garlic. Heat oil in a frying pan and sauté for 10 min.
Drain soy mince and add to the frying pan along with wine, tomato and oregano. Let simmer for about 15 min. Season with salt and pepper.

The pasta:

Bring plenty of water with a pinch of salt to a boil in a pot.
Boil rigatoni for 9-11 min (according to taste).
Drain. 

To the oven:

Add the soy cream to the sauce and mix with the rigatoni.
Place everything in a baking dish. Finish with cheese on top and bake until golden brown.

Your meal:

Serve baked ragu with rocket leaves.
