Mise en place:

Peel and chop the garlic.
Wash and cut the tomato into pieces.
Separate basil leaves from the stems.
Slice the aubergine into very thin rounds.
Chop the cayenne pepper. 

Mise en place - Rigatoni alla Norma

The tomato sauce:

Heat a generous dash of olive oil in a pot.
Sauté the garlic and tomato over medium heat, covered, until they soften, approximately 15 minutes.
Blend until the sauce is smooth and homogeneous.
Add oregano, brown sugar, cayenne to taste (spicy!), and season with salt and pepper. Let it simmer covered over low heat for another 10 minutes.

The pasta:

Bring water with a teaspoon of salt to a boil in a pot.
Boil the pasta to the desired doneness, 9-11 minutes.
Drain and set aside. 

The aubergine:

Heat a dash of oil in a frying pan. Fry aubergine rounds on both sides until golden.
Season with salt and pepper.
Place paper towels on a plate and put aubergine rounds on top when they are done.

Your meal:

In the pot with the drained pasta, mix the pasta with tomato sauce, Väcka Mözza, eggplant, and add
spinach.
Divide among the plates and garnish with basil leaves.
