In a small pot, bring water with a pinch of salt to a boil. Add the noodles and boil for 6 minutes. In a bowls, combine peanut butter, soy sauce, mirin and the amount of sriracha you prefer (it’s spicy!) Separate the coriander and basil leaves from their branches, throw away the branches. Separate the lettuce leaves from the root, throw away the root. In a bowl of hot water, leave rice paper (one by one) soaking until softened (40s approx). When soft, extend the now transparent rice paper on a clean surface and add carrot, cucumber, avocado, lettuce, noodles, cilantro and basil. Fold the bottom of the paper over the stuffing, then the sides and finally roll to complete. Repeat for each roll. Boil the noodles:
