Vegetarian summer rolls with peanut sriracha sauce

Boil the noodles:

In a small pot, bring water with a pinch of salt to a boil. Add the noodles and boil for 6 minutes.
Remove from the heat and rinse the noodles in cold water. Set aside.

The sauce:

In a bowls, combine peanut butter, soy sauce, mirin and the amount of sriracha you prefer (it’s spicy!)
Add 2-3 tablespoons of water and stir to obtain a homogeneous consistency. (Regulate with the amount of water.) 

Prepare the ingredients:

Separate the coriander and basil leaves from their branches, throw away the branches. Separate the lettuce leaves from the root, throw away the root.
Peel carrot. Cut carrot and cucumber in match sticks. Peel and slice the avocado. Cut the lime in half and squeeze the juice over the avocado. 

The summer rolls:

In a bowl of hot water, leave rice paper (one by one) soaking until softened (40s approx). When soft, extend the now transparent rice paper on a clean surface and add carrot, cucumber, avocado, lettuce, noodles, cilantro and basil. Fold the bottom of the paper over the stuffing, then the sides and finally roll to complete. Repeat for each roll.

The last step:

Serve the rolls with the sauce and some of the
veggies and/or herbs left over.
