The oven:

Preheat oven to 200ºC, heat above and below.

The eggs:

Place eggs in a pot.
Cover with water and bring to a boil.
Cook for 10 minutes.
Peel and cut into quarters.

The aubergine: :

Cut the aubergines into sticks.
Season with sumac, salt, pepper and a dash of olive oil.
Bake 15 min approx. until tender.

The salmon:

Place salmon on an oven tray.
Garnish with olive oil. Season with salt and pepper and bake for 8 minutes or until desired doneness.

The salad:

Cut lemon in half.
Mix spinach with the eggs in a bowl.
Squeeze lemon over the salad.
Season with salt and pepper.
Add a dash of olive oil.
