The rice:

In a pot, combine rice with the double amount of water (1 cup rice + 2 cups water) and a pinch of salt.
Cook at low heat for 12-15 minutes, or until the water has been absorbed. 

El arroz

The carrots:

Peel and cut the carrots into sticks, approx. 1 cm wide.
Grate the ginger.
Heat some oil in a pan and fry the carrots 10 min.
Add ginger, brown sugar and season with salt and pepper. Fry for 2 more minutes.  

While the carrots are getting fried...:

… we’ll continue with the dressing.
Zest lime.
Squeeze lime and mix the juice with zest, Greek yogurt, salt and pepper.

The salmon:

Fry salmon 3 min per side.
Season with salt and pepper. 

Your meal is ready:

Serve salmon with rice, glazed carrots and yogurt dressing.
