Mise en place:

Preheat the oven to 175°C (using convection) or 200°C (conventional).

Dice onion finely (brunoise).
Peel and cut carrot into thick rounds, 1 cm (coins).
Peel potato and cut into smaller pieces.
Grate cheddar cheese.

To the frying pan:

Heat a dash of oil in a frying.
Sauté onion until golden.
Add carrot, thyme, red wine, chopped tomato, and crumbled broth.
Let simmer over low heat for 10 minutes.
If it seems to be drying out, add water. 

The potatoes:

Boil potatoes until tender when pierced with a fork, 10-15 minutes.
Drain and mix with butter.
Mash with a fork, hand blender, or electric mixer.
Season with salt and pepper. 

The stew:

It has been 10 minutes since you added the carrots.
Now, add lentils (with their liquid) and let simmer for another 10 minutes over low heat.
If you have a lid for your frying pan, you can use it to prevent excessive evaporation. 

The Shepherd's pie:

Place the stew in an ovenproof dish.
Spread the mashed potatoes on top. Finish with a sprinkle of grated cheddar cheese. Bake for approximately 20 minutes or until golden brown.
