Pork tenderloin with apple sauce

The pork tenderloin is a piece of meat from the lower back, situated just between the lower ribs and the spine, its approximate weight is 400g. It can be cooked in different ways, today we accompany it with applesauce.

The apple:

Peel and grate apples.
Place grated apples, sugar, cinnamon and ½ glass of water in a saucepan. Season with salt and peppr and mix. Bring to a boil and cook over low heat for approx.
20 min. Stir occasionally.
Remove from heat and add half the butter.

The pork tenderloin:

Cut off excess fat if necessary. Cut in half and season.
Heat oil in a frying pan and cook over medium heat, 5 min /side approx. Halfway through cooking, add thyme. Just before finishing, add the remaining butter.
Set aside to rest 5 minutes. 

The scallion:

Cut scallion in half lengthwise.
Heat oil in a frying pan and add scallion.
Season with salt and pepper and sauté.
Set aside. 

Your meal:

Put 2 tablespoons of puree on the side of the plate.
Cut the pork tenderloin into slices and put in a line.
Finish placing the scallion on the other side.
