Pork tenderloin with vegetable stir fry and rice

The idea of putting sauces on food goes back pretty far. We now know that smoke and salt have anti-microbial properties. But it all began when Spanish explorers came across Taino Indians who used a wooden structure called “Barbecoa” to smoke their seafood. The rice:

Put rice, water and a pinch of salt in a pan (2 glasses of water for each glass of rice). Bring to a boil and lower the heat to a minimum. Let boil (with lid) for 10-15 min or until the rice has absorbed the water.

The vegetables:

Cut onion into julienne and beans at an angle.
Peel and cut carrots into matchsticks.
Chop parsley. 

The pork tenderloin:

Cut tenderloinin half. Salt and pepper on all sides.
Heat oil in a frying pan. Brown the meat on all sides over medium-high heat. Lower the heat to medium-low and cook for 7-9 min / side. If the meat is very soft when palpated, it is not done yet. If it is very hard it is already well done. Just before finishing, add the barbecue sauce and caramelize. Set aside covered or wrapped in aluminum foil. 

The vegetable stir fry:

Heat oil in a frying pan and cook the vegetables over high heat.
Season with salt and pepper and add the parsley.

Your meal:

Serve tenderloin with rice and vegetable stir fry.
