Oriental style pork tenderloin

Teriyaki is a cooking technique with its roots in the Japanese cuisine in which food is prepared in a sweet sauce marinade. The word “teriyaki” derives from the word “teri”, which refers to the shine that the sauce gives it, and “yaki”, which refers to the method of cooking it.

The rice:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 15 min or until the rice has absorbed the water.

The vegetables:

Mince garlic and ginger.
Chop coriander.
Cut lime into wedges.
Cut pak choi in half. 

The pak choi:

Heat a dash of oil in the frying pan and cook until the desired point of doneness. Keep in mind that it cooks quickly, but it will depend on the amount of heat you apply.
Season with salt and pepper. Set aside. 

The pork tenderloin:

Heat a dash of oil in the frying pan over medium heat.
Add garlic and ginger and sauté for a moment. Add pork and cook on both sides, until cooked through. The cooking time will depend on your stove, normally it is 4-6min / side. Squeeze a lime wedge over the meat, season with salt and pepper and add the teriyaki sauce before finishing. Let it cook in the sauce the last minute.

Your meal:

Serve with basmati rice, pak choi, coriander, and peanuts. Finish off by squeezing the lime over it all.
