Vietnamese soup with courgette and Heüra vegetable protein

Mise en place:

Mince garlic.
Peel and mince ginger.
Chop onion.
Cut zucchini into 0,5 cm cubes.

To the pot:

Heat a dash of oil in a pot and sauté vegetables for 5-7 min until golden.
Add rice, a bouillon cube and 1,5 liters of water for each bouillon cube.
Season with salt and pepper.
Boil for 20 min

The vegetable protein:

Cut the heüra strips into smaller strips and sauté them in a pan with a dash of oil until crispy and toasted. 

Your meal:

Chop chives, coriander and cut the lime in half.
Serve soup in a soup dish and add strips of heüra on top
