Chicken souvlaki with pita bread, toasted broccoli and feta

Souvlaki is a traditional recipe of from the Greek gastronomy, we could say that it is its version of fast food that combines bread, veggies and generally some type of meat. We normally find it on a skewer, in fact, the term Souvlaki is the diminutive of Souvla which means skewer. Today at LetsCook without skewer and with chicken!

The oven:

Preheat the oven to 200ºC, heat above and below.

The tzatziki:

Peel cucumber and cut in half, lengthwise. Scoop out the seeds with a spoon and disregard. Cut one half into thin halfmoons and chop the other.
Mince garlic.
Squeeze lemon.
Mix yogurt, garlic, chopped cucumber, lemon juice (to taste) in a bowl. Season with salt and pepper. 

The broccoli:

Cut broccoli into florets.
Spread out on an oven tray and season with olive oil.
Season with salt and pepper.
Bake for about 15 min, stirring occasionally, until toasted but not burned. 

The onion:

Cut onion into thin rings or arches.
In a bowl, mix vinegar with the same amount of water. Season with salt and pepper. Add onion and the rest of the cucumber. Let marinate.  

The chicken:

Cut each chicken breast in 3-4 long strips. Season with spice mix.
Heat oil in a frying pan. Cook chicken on both sides until cooked through. (The juice is clear, not pink, when the chicken is done.) 

Your meal:

Toast the pita breads in the oven 1-2 min. Cut them in half.
Place half a bread on your plate. Top with tzatziki, chicken, broccoli and marinated onion. Finish with a sprinkle of crumbled feta.
