Beef Stroganoff with parsley crispy potatoes

Stroganoff is a classic around the world. It has become a favourite meal during the week in many homes. Beef Stroganoff is similar to a stew over low heat, but we have it on the table in 45 minutes! Meal rich in iron and protein.

Mise en place:

Pre-heat oven to 225ºC.
Wash and cut potatoes and carrots into wedges.
Place them on an oven tray.
Add a dash of oil. Bake in the middle of the oven until the potato is tender (35-45 min). 

Mise en place - Stroganoff de ternera

The meat:

Cut onion in julienne.
Cut meat into thin strips.
¡Remember to stir the potatoes from time to time! 

The stroganoff I:

5-10min before the potatoes are done:
Brown the onion in a frying pan. Set aside.
Brown the meat in the same frying pan over medium heat until it got some colour (1 min max). 

The stroganoff II:

In the frying pan where the meat is, add onion, spice mix, mustard, fried tomato and (crumbled) vegetable stock. Stir and add evaporated milk. Mix well and let simmer for 2-3 min.
Season with salt and pepper.

Your meal:

Once potatoes and carrots are done, remove them from the oven. Season with salt and pepper.
Serve with the stroganoff.
