The vegetables:

Peel and dice potatoes.
Cut tofu into small cubes.
Chop onion, parsley, and garlic.
Slice mushrooms. 

Las verduras - Stroganoff vegano

The mashed potatoes:

Place potato in a pot and cover with water. Add a pinch of salt. Boil covered for about 15 minutes, until tender.
Drain and mash with a hand blender or fork.
Add a drizzle of olive oil and half of the chopped parsley. Season with salt and pepper.

The stroganoff:

Heat oil in a pot or frying pan.
Sauté onion and garlic. Add mushrooms and cook for about 5 min. Add soy sauce, spice mix and crumbled vegetable stock. Add a dash of water (a few tablespoons). Stir well and bring to a boil.
Add yogurt and tofu. Let simmer for 2 min approx. to get a creamy consistency.

Your meal:

Serve stroganoff with mashed potatoes. Sprinkle parsley on top.
