Tofu tacos with pico de gallo and guacamole

Tofu is a 100% vegetable protein made from soybeans. This food is very fashionable due to its high content of calcium and protein. Tofu is basically curdled soy milk and its appearance is similar to fresh cheese.This food was imported from Asia, in particular from Japan and China, and can be used as a main ingredient in a dish or as a side. The potatoes:

Preheat oven to 200ºC, heat above and below.

Cut potatoes into small cubes and mince garlic. Place
on a baking tray with olive oil, salt and pepper. Bake
until tender, 20min approx

The guacamole:

Cut lime in half.
Chop onion and divide into two parts and mix one half with the juice of half the lime, chipotle (spicy! add according to taste) and avocado meat. Mash everything with a fork until pureed.

Pico de gallo:

Chop tomato and coriander. Mix with the other half of the chopped onion and juice from the remaining lime.
Season with salt and pepper. 

The tofu:

Cut tofu into cubes and mix with spice mix.
Sauté in a frying pan with a dash of olive oil until golden.

Your meal:

Heat tortillas for 3 min in the oven.
Spread guacamole on the tortillas, add tofu, potatoes and finish with pico de gallo on top.
