Vegetable tajine on ras al hanout served with couscous

Ras al hanout is a mixture of herbs and spices (up to 30) whose origin is in the Maghreb area. It gives the special and characteristic touch to the zucchini tagine that LetsCook prepares in this recipe. This mixture of spices can be spicy and, as always, you decide how much to put in your tajine. Meal rich in protein and potassium. #Vegan

Prepare the ingredients:

Cut onion in julienne and chop garlic.
Cut zucchini into 1-2 cm cubes.
Chop cashew and raisins. 

Prepara los ingredientes - Tajine de verduras

The tajine:

In a pot, heat oil and fry garlic and onion until golden brown.
Add zucchini, ras el hanout (spicy!), cumin, cinnamon, tomato, a glass of water (as needed), salt and pepper.
Give it a stir and let boil 5-10 min until the zucchini softens.

The couscous:

Bring 5 dl of water, with the broth in it, to the boiling point. Set aside. Measure the couscous in a cup, then pour it into a bowl. Measure the same amount of broth in the cup, pour it into the bowl as well and cover with a plate so that the couscous can absorb the liquid for a few minutes. 

The finish:

Separate the couscous grains with a fork and mix couscous with cashews and raisins.
Serve with the tajine.
