Sweet and sour noodles with chicken and peanuts

Rice noodles have their origins in southern China but nowadays we find them around the world. If they are a bit thick, we would be talking about shahe fen, and they are typical in Cantonese food. The finer noodles are more common in areas such as Thailand where we find it in the famous pad thai. Rice noodles are quick to prepare and have to be eaten on the spot, making them a fast food classic.

Mise en place:

Chop coriander and ginger.
Cut chili and chives at an angle.
Cut cabbage and onion into julienne. 

Prepara las verduras - Tallarines agridulces

The noodles:

Boil like pasta for 8 min.
Drain, pass through cold water and set aside. 

The dressing:

In a bowl, mix soy sauce, jam, vinegar, and corn-starch.  

The vegetables:

Heat oil in a frying pan and sauté onion, chili (hot! add at your own risk), cabbage, scallion and ginger over medium-high heat.
Add the noodles and mix well.

The chicken:

Heat oil in a frying pan and cook chicken on both sides, until fully cooked, over medium heat. 

Your meal:

Mix dressing with noodles and vegetables.
Serve with the chicken and sprinkle peanuts and coriander on top.
