Teriyaki minced pork with pear and mint salad

The rice:

Place rice, water, and a pinch of salt in a pot (2 parts water to 1 part rice). Bring to a boil and reduce heat to a minimum. Simmer covered for 12-15 minutes or until the rice has absorbed the water.

Mise en place:

Cut cabbage into thin strips.
Clean and slice pear into thin wedges.
Chop onion and mince garlic.
Separate mint leaves from stems. Discard the stems. 

The salad:

In a bowl, mix soy sauce, half of the vinegar, sriracha to taste (spicy!), and a dash of oil.
Add cabbage.
Season with salt and pepper.
Mix well.
Place pear wedges on top and finish with a sprinkle of mint (reserving half the leaves for later).

The pork mince:

Heat a dash of oil in a frying pan. Sauté pork mince over high heat for a couple of minutes. Add onion and garlic. Sauté until everything is golden, about 5-7 minutes.
Add the remaining vinegar and half of the teriyaki sauce. Sauté for an additional 2 minutes until everything is soaked.
Season with salt and pepper to taste. Turn off the heat and incorporate the remaining teriyaki sauce. 

Your meal:

Serve minced meat with salad and jasmine rice.
Finish with a sprinkle of mint leaves.
