Beef in Maafé sauce with broccoli and peanut-flavored rice

Maafé sauce is a traditional West African stew. It is a stew based on peanuts. It originates from the Mandinka and Bambara peoples of Mali. The proper name in Mandinka is domodah or tigadegena in Bamanankan. Traditionally it is prepared as a side to lamb, beef, chicken or even a plant-based dish. In Ghana, this stew is often served with tofu.

The rice:

Put rice, water and a pinch of salt in a pot.
(2 cups of water for each cup of rice)
Bring to a boil and lower the heat to a minimum.
Boil covered 15 min or until the rice has absorbed the water.

The vegetables:

Cut red pepper, garlic and onion in brunoise (finely).
Squeeze lemon.
Cut broccoli into florets. 

The sauce:

Heat a dash of oil in a pot and fry garlic, onion and pepper. Add salt to taste.
Once golden brown, add fried tomato, lemon juice, peanut butter and a little water (approx 150ml for each pepper in your kit).
Mix well and let simmer over low heat for 5 min, 

The broccoli:

In a pot, bring water with a pinch of salt to a boil.
Add broccoli and boil for 3 min.
Drain and set aside.

The meat:

Pat the meat dry with a paper towel.
Heat a dash of oil in a frying pan at medium-high heat.
Cook meat to the desired point of doneness.
Season with salt and pepper.
Cut into strips. 

Your meal:

Serve meat with rice, sauce and broccoli.
