Trofie with pesto rosso with sun dried tomatoes and parmesan

Pesto is a must in your collection of Italian recipes. Perhaps the most famous one is pesto genovese, but pesto rosso, or Sicilian pesto, is also very versatile and tasty. The main ingredient is tomato. At LetsCook we prepare it with sun-dried tomatoes, but it can also be made with fresh tomatoes. As an interesting nuance we add capers and, of course, a lot of Parmesan and fresh basil.

The pasta:

Boil a pot with plenty of water with a pinch of salt.
When the water boils, add the pasta and boil 11-13 min according to taste.
Drain and set aside in the pot.
(When the pasta is boiling, continue with the rest of the
recipe.)

La pasta - Trofie con pesto rosso

The pesto I:

Mince garlic and capers.
Cut sun dried tomato and basil into julienne. 

The pesto II:

Heat a dash of oil in a frying pan and sauté the garlic and capers until slightly golden.
Incorporate tomato sauce, brown sugar and season with salt and pepper. Lower the heat to a minimum and let simmer for a moment.
Add drained pasta, sun dried tomato, basil (leaving a little to decorate the plate) and parmesan. Stir well. 

Your meal:

Serve your pasta with basil leaves and sliced almonds on top.
