Cut red peppers into julienne. Put water in a pot and bring to a boil. Add a pinch of salt. Add noodles and boil for 5 min. Drain and set aside. Heat oil in a frying pan and sauté peppers and mushrooms for 3 min over high heat. Add chives and tofu, cook over medium heat for 5 min. Season with salt and pepper.
